Pumpkin Spice Puffins

I have been looking for some good mini muffin recipes for several upcoming trips we have planned. I like having snacks in the car that aren't always junk food. I have also been hunting some breakfast ideas for Drew that aren't totally messy or sliced cheese (I think this kid could eat a pack of sliced cheese in about two days). 

I got the basic recipe for these from Bakerella. Though, I doubled it and made half with chocolate chips and the other half just pumpkin spice.

2 cups flour
2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons sugar
1 1/2 cup buttermilk
2 eggs
3 tablespoons pure maple syrup
1/2 can of pumpkin puree
1 teaspoon nutmeg
1 teaspoon allspice
2 teaspoons cinnamon
4 tablespoons melted butter
1/2 cup milk chocolate chips for putting on the tops
    • Preheat oven to 350 degrees.
    • Combine flour, baking powder, baking soda, salt, spices and sugar in a medium bowl. Sift together with a wire whisk.
    • In another bowl, stir buttermilk, eggs, maple syrup, pumpkin puree and melted butter until just combined.
    • Add wet ingredients to dry ingredients and stir with a spoon until combined.
    • Reserve a chips to sprinkle on the tops.
    • Bake for 8-9 minutes.
Personally, I like the chocolate chip ones just a wee bit better. The plain ones aren't sweet at all, but with just 3 chocolate chips on the top of the others they have just a tiny bit of sweet. They weren't hard to make or time consuming (or at least not to bad with a toddler helping at every step). 

Drew thought the muffins were a hit. I only gave him the plain ones but he ate four in a row and was going back for more before I finally got his lunch made. I am glad to know at least for the moment he really likes them. Now, I am off to try my hand at some apple spice muffins. I am going to use Once A Month Mom's recipe for Mini Banana Pancake Muffins for the Apple Spice ones, except with apples. I am excited to see how they turn out. I am loving Fall foods being here. I am such a Fall baby!

Movie Fail

Drew and I tried to go to a movie with Courtney today. Last time we had great luck with it. Today we didn't. Drew just wanted to run around which wouldn't have been a problem, but there were a bunch of people in the theater. Apparently rain made othes people think cheap movies were a good idea. Drew and I spent the bulk of the movie in the lobby with the car games. Drew kept climbing between the two trying out both steering wheels.

Today we went to a splash pad with Tiny Toes. It was a lot of fun. It was fenced in so Drew could run and play all he wanted. Drew even made a friend.

8 Weeks, Can I Do It?

Today is the start of an 8 week experiment.  I found this program at 8 Weeks to a Better You. I was really happy to find it because I have been looking for something with some structure. I have been doing some of this on my own, but not cohesively. This plan has it all together in one place. The only down side was I missed the join up date and I honestly don't have the money to join the official challenge any way, but I have a blog. 

I am going to use this challenge to gear up for 31 Days of Blogging in October. My goal is to post on a topic a day that is a part of the challenge. I am also going to post my points for that day and the total for week and total goal. 

The Goals:

1. 45 minutes of exercise a day.
2. 7 hours of sleep a day (it doesn't have to be continuous and can be reached by using naps)
3. 8 glasses of water a day.
4. No sugar or white flour.
5. No soda, no junk food, no fast food.
6. Eat 2 servings of fruits and vegetables a day.
7. No eating after 8 PM (unless it is dinner).
8. Write in a journal daily (or blog).
9. 15 minutes of reading Bible a day.
10. Complete a random act of kindness a day (big or small).

I think I know the areas I am going to have problems with. I am interested to see in how I overcome them. I am also interested to see how this works when we are traveling. The website does make some provisions on certain issues that I will just have to learn to use. I am nervous about all this, but I am excited to do it. I need more focus in my life and I need some extra help getting ready for the 5k in November.
